Hold R after a jump, then use the Left Analog-stick to steer your descent.

Moon Level And Moon Buggy
Find all 9 Blue Moon cafe signs in free roam or career mode. (It is easier in free roam mode). There will be 3 signs in each level. When you find all the signs, you will unlock the Moon leve, and the Moon buggy vehicle.
